Ukwa Achicha

Also known as Ukwa Achicha (Breadfruit and Dried Cocoyam Pottage)

The combined Igbo pot: ukwa seeds and achicha (dried cocoyam flakes) cooked together in palm oil and pepper. Lounje already has ukwa porridge and achicha ede as separate dishes; this is the mixed plate.

Ingredients

  • 2 cups of dried ukwa seeds, soaked
  • 2 cups of dried cocoyam flakes (achicha), soaked until soft
  • 1 small piece of potash for the ukwa
  • 2 cooking spoons of palm oil
  • Pepper, crayfish, onion, seasoning and salt

Method

    Boil the soaked ukwa with potash until the seeds are soft. In the last stretch, add the drained achicha so both finish together.

    Stir in palm oil, pepper, crayfish, onion, seasoning and salt. Simmer until the pot is glossy and thick. Serve hot.
