Agidi Jollof

Also known as Agidi Jollof (Savoury Set Corn with Stew)

Agidi jollof is the party and snack version of set corn pudding: the cooked agidi is mixed with a rich pepper stew, often with soft bone, then left to set. It is a light lunch as much as a snack, and it belongs with porridge and breakfast puddings, not with jollof rice.

Ingredients

  • 1 cup of corn flour or prepared ogi
  • 700 ml of water
  • 2 cooking spoons of palm oil or vegetable oil
  • 2 ripe tomatoes, blended
  • 2 tatashe peppers, blended
  • 1 Atarodo, blended
  • 1 onion, sliced
  • Soft cooked meat or chicken on the bone, optional
  • 2 seasoning cubes
  • Salt to taste

Method

    Cook the corn flour with water as for plain agidi, stirring until very thick.

    In a separate pan, fry onion in oil, add the blended peppers and tomatoes, and cook until the stew is thick and the oil floats. Season with cubes and salt. Stir in the meat if using.

    Fold enough stew into the hot agidi to colour and flavour it without making it watery. Taste for salt.

    Pack into bowls or leaves and cool until set. Serve as a snack or light meal.
