Igbangwu

Also known as Igbangwu (Igbo Maize Meal)

A thick Igbo maize meal from ground dried maize, cooked until it holds like a soft swallow or spoonable pudding, then eaten with soup or a pepper sauce. It is not agidi, not tuwo, and not corn fufu from fresh corn.

Ingredients

  • 2 cups of finely ground dried maize
  • 4 to 5 cups of water
  • Salt to taste
  • Soup or pepper sauce, to serve

Method

  1. 01

    Mix the maize flour with some of the cold water to a smooth paste. Bring the rest of the water to a boil.

    Stir the paste into the boiling water and cook, stirring hard, until it thickens into a cohesive meal, 15 to 20 minutes.

  3. 03

    Mould or spoon into bowls. Serve with a compatible soup or ata.
