Dambu Shinkafa

Also known as Dambu Shinkafa (Steamed Broken Rice)

Hausa steamed broken rice mixed with moringa, pepper, groundnut and fried onion oil. Lounje already has Dambu Nama (the meat shred). This is the rice dambu.

Ingredients

  • 2 cups of rice, broken in a dry mill to small pieces (not flour)
  • 1 onion, grated, plus 1 onion for frying
  • 2 to 3 peppers, grated
  • A handful of moringa leaves, washed
  • 4 tablespoons of roasted groundnuts, crushed
  • Seasoning cubes and a little spice mix
  • ½ cup of vegetable oil

Method

    Sieve off any rice dust. Soak the broken rice 10 minutes, drain, and steam 30 minutes until just tender.

    Mix the steamed rice with grated pepper, onion, moringa, groundnut and seasoning. Steam again 30 to 45 minutes until soft.

    Fry oil with sliced onion until fragrant. Pour over the dambu, toss, and serve.
