Watermelon and Ginger Smoothie

Ingredients
- A big chunk of ripe watermelon flesh, seeds removed
- A very big piece of fresh ginger, peeled
- Juice of 1 big lime
- 2 glasses of cold water — or less if the watermelon is very watery
- A tiny pinch of salt
- Ice cubes
- A small handful of fresh mint — optional
Method

Blending. Cut watermelon flesh into chunks. Place in a blender with peeled ginger (start with a small piece and add more to taste), cold water, lime juice and salt. Blend at high speed until completely smooth.

Tasting and Adjusting. Taste the smoothie. Add more ginger if you want more heat, more lime if you want more brightness. The watermelon provides sufficient sweetness — no added sugar is needed.

Serving. Pour over ice in tall glasses. Add fresh mint if desired. Serve immediately.
