Guava Juice

Also known as Guava Juice (Guava Nigerian Style)

Nigerian Guava Juice is made from the pink-fleshed variety of guava (Psidium guajava) that grows abundantly across Southern Nigeria — a fruit of extraordinary nutritional density and unique flavour. Nigerian guavas have a slightly grainy texture, a intensely sweet-tart flavour and a beautiful pale pink to salmon flesh.

Ingredients

  • 6 to 8 big ripe guavas (choose the pinkest-fleshed variety available for the most vibrant juice)
  • 3 glasses of cold water
  • Sugar or honey to taste
  • A squeeze of lemon juice
  • Ice cubes

Method

  1. 01

    Preparing the Guavas. Wash the guavas thoroughly. Cut into quarters. No need to peel — the skin blends well. Remove the very centre seedy portion if the seeds are very hard. Nigerian guavas' seeds are softer and can often be blended entirely.

    Blending. Place all guava quarters in a blender with 3 glasses of cold water. Blend at high speed for 2 minutes until as smooth as possible.

    Straining. Strain through a fine sieve or muslin cloth, pressing very firmly. Guava has a naturally thick, grainy texture and must be strained thoroughly for a smooth juice.

    Sweetening and Finishing. Add sugar or honey to taste. Add lemon juice. Stir well. The juice should be a beautiful pale pink to deep rose colour.

  5. 05

    Serving. Pour over ice in clear glasses.
