Yamarita

Also known as Yamarita (Dundun Oniyeri — Egg-Battered Fried Yam)

Yam batons dipped in seasoned egg and deep-fried until the coating is crisp. Different from plain dundun and from yam balls, both already in Lounje.

Ingredients

  • 1 medium yam, peeled and cut into batons
  • 3 eggs, beaten
  • 4 tablespoons of flour
  • Salt, a pinch of seasoning and ground pepper
  • Oil for deep-frying

Method

  1. 01

    Rinse the yam. Parboil 5 minutes and drain well so the coating sticks.

  2. 02

    Season the egg with salt, pepper and flour.

  3. 03

    Dip each baton and fry in hot oil until golden. Serve with ata dindin or ketchup.
