Also known as Puff Puff Party Style (Large Batch)
Puff Puff Party Style is the large-batch, party-scale preparation of Nigeria's beloved fried dough balls — made in quantities sufficient for a full Owambe party of 50 to a small handfuluests. The professional party caterer's technique — precise batter consistency, proper oil temperature management and the wet-hand dropping technique — produces consistently round, uniformly golden, light Puff Puff that is the most eagerly consumed item in any Nigerian party small-chops selecti

Ingredients
- 6 big cups of plain flour
- 1 tablespoon of instant dry yeast
- 1 cup of white sugar
- 1 teaspoon of salt
- 1 teaspoon of ground nutmeg
- Approximately 2 cups of warm water
- Vegetable oil for deep-frying — a large, deep pot filled halfway
Method
- 01
Making the Large Batch Batter. Combine all dry ingredients. Add warm water gradually, mixing until a smooth, thick batter forms — thick enough to hold a shape briefly but not stiff.
- 02
Proving the Batter. Cover tightly. Place in a warm location for 30 to 45 minutes until the batter has risen significantly and is bubbly throughout.
- 03
Oil Temperature Management. Heat oil to precisely moderate-to-hot heat to hot oven heat. Maintaining consistent temperature is the professional caterer's most important skill — too hot and outside burns before inside cooks; too cold and Puff Puff is greasy.
- 04
Dropping Perfect Balls. Wet both hands. Squeeze a portion of batter in your fist and allow a ball to emerge from the circle made by your thumb and index finger, dropping directly into the hot oil. This wet-hand technique creates consistently round Puff Puff.
- 05
Frying in Managed Batches. Fry in batches of 8 to 10. Turn regularly so they colour evenly. Fry 3 to 4 minutes per batch until uniformly deep golden-brown.
- 06
Keeping Warm for Party Service. Keep each cooked batch in a low oven at boiling point while frying subsequent batches.
