Suya Street Style

Also known as Suya Street Style (Mallam's Charcoal Suya)

Suya Street Style is the authentic roadside version of Nigeria's most beloved street food — prepared exactly as the Suya Mallam makes it every evening at dusk. The Mallam's technique involves paper-thin beef slices, multiple layers of Yaji spice paste and intense charcoal heat that produces charred edges and smoky interiors.

Ingredients

  • 1 big piece of beef rump or sirloin, sliced paper-thin against the grain
  • Metal skewers FOR THE AUTHENTIC YAJI (Mallam's Recipe):
  • 1 big cup of roasted groundnuts, ground to fine powder
  • 2 big tablespoons of ground ginger
  • 2 big tablespoons of ground chilli (Cameroon pepper or paprika)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Half a teaspoon of ground cloves
  • Half a teaspoon of ground selim pepper (uda) — the Mallam's secret ingredient
  • 2 seasoning cubes (Knorr), crushed to powder
  • 1 teaspoon of salt
  • 3 big tablespoons of groundnut oil — for the marinade TO SERVE:
  • 1 large white onion, thinly sliced
  • 2 big ripe tomatoes, sliced
  • Shredded cabbage

Method

  1. 01

    Making the Authentic Yaji. Combine all Yaji ingredients and mix very thoroughly. The selim pepper (uda) is the secret ingredient that professional Suya Mallams use — it gives a distinctive, slightly resinous depth that is immediately recognisable as authentic street Suya.

    Slicing the Meat Paper-Thin. Freeze beef for 25 minutes to firm it. Slice against the grain as thinly as possible — 2 to 3 mm maximum. The Mallam's slices are almost translucent. Thin slices absorb more Yaji per bite.

    Marinating. Mix 4 big tablespoons of Yaji with groundnut oil to form a paste. Coat all beef slices generously. Massage into the meat. Refrigerate for 3 hours minimum — overnight is best.

    Skewering. Thread marinated beef strips lengthwise onto metal skewers, pressing flat and even.

  5. 05

    Charcoal Grilling. Grill over white-hot charcoal for 3 to 4 minutes per side. The meat should char at the edges while remaining juicy inside.

    The Final Dry Yaji Coating. Immediately off the grill, dust very generously with dry Yaji powder. Press into the hot meat. This double application — wet paste before, dry Yaji after — creates the authentic Mallam crust.

  7. 07

    Serving the Street Way. Serve on shredded cabbage with raw sliced onion rings and tomato. In authentic Suya culture, the Mallam wraps the Suya in newspaper — the paper absorbs excess fat and the communal sharing is part of the experience.
