Fanke

Also known as Fanke (Hausa Puff Puff)

Northern fried wheat or semo fritters: a yeasted batter, risen and dropped into oil. Related to puff puff, but this is the Hausa name and the version often made with semovita.

Ingredients

  • 3 cups of flour or semovita
  • 1 tablespoon of instant yeast
  • ½ to 1 cup of sugar, to taste
  • 1½ teaspoons of baking powder
  • About 2 cups of warm water
  • Vanilla or nutmeg, optional
  • Oil for deep-frying

Method

  1. 01

    Mix the dry ingredients. Stir in warm water and vanilla to a thick batter. Cover and rise 1 hour.

  2. 02

    Fry spoonfuls in medium-hot oil until golden on all sides. Drain. Serve warm as breakfast or a snack.
