Avocado Smoothie
Also known as Avocado Smoothie (Ube Pear Health Smoothie)
The Nigerian Avocado Smoothie — made from the fruit Nigerians call 'Nigerian pear' (Ube in Igbo and Pear in Nigerian Pidgin) — is one of the most nourishing health drinks in the Nigerian repertoire. Nigerian avocados, abundant from April to September, have a rich, buttery, intensely green flesh that makes an exceptionally creamy smoothie.

Ingredients
- 2 big ripe Nigerian avocados (ube), peeled and stone removed
- 1 big ripe banana
- A big handful of fresh pineapple chunks OR juice of 2 limes
- 2 glasses of cold coconut water or regular cold water
- A tiny pinch of salt
- A small piece of fresh ginger — optional
- Ice cubes
Method

Preparing the Avocado. Halve each avocado. Remove the stone. Scoop the flesh from the skin with a spoon. The flesh should be creamy-green and yield to gentle pressure.

Blending. Place avocado flesh, banana, pineapple or lime juice, coconut water or water, ginger if using, salt and ice in a blender. Blend at high speed for 1 to 2 minutes until completely smooth, creamy and uniform.

Adjusting Consistency. If too thick, add a little more water. If too thin (unlikely with avocado), add more avocado.

Serving. Pour into glasses immediately. The avocado smoothie will begin to discolour quickly — serve and drink without delay.
