Kilishi Bites
Also known as Kilishi Bites (Kano Street Premium Snack)
Kilishi Bites are the street-food portion of Nigeria's most prestigious dried meat product — Kilishi (full method in Recipe #176 and #246) cut into small, bite-sized pieces for easy street consumption. In Kano, Kilishi sellers at the famous Kofar Wambai market and Kurmi market cut their Kilishi into small pieces and sell them by weight in small bags — this is how most Nigerians first experience Kilishi.

Ingredients
- Full Kilishi as prepared in Recipe #176 or Recipe #246
- Sharp knife for cutting
Method

Preparing the Kilishi. Follow the full Kilishi preparation method in Recipe #176 or #246. Ensure the Kilishi is completely dried and crispy.

Cutting into Bites. Using a very sharp knife or kitchen scissors, cut the finished Kilishi sheets into small, irregular bite-sized pieces — approximately 3 to 4 fingers width square. The Kilishi will be hard and may require some force to cut.

Packaging for Street Sale. Place the Kilishi bites in small bags or arrange on a tray covered with paper. Sprinkle a little extra dry Yaji powder over the top as a finishing garnish.

Pricing and Selling. Kilishi is sold by weight or by the piece at Nigerian street markets. Each bite should be a complete flavour experience — intensely nutty, spiced and dried.
