Aadun

Also known as Aadun (Yoruba Roasted Corn and palm oil Snack)

Aadun is a traditional Yoruba snack made from roasted corn flour mixed with palm oil and spices — a crumbly, richly flavoured, intensely satisfying corn-based treat. The roasted corn flour gives Aadun its characteristic nutty, slightly smoky flavour while the palm oil binds it and gives colour and richness.

Ingredients

  • 2 big cups of roasted corn flour (oka ijebu — yellow roasted corn meal)
  • 3 cooking spoons of red palm oil
  • 2 Atarodo, ground to powder
  • 1 teaspoon of dawadawa, ground — optional
  • 2 big tablespoons of ground dried crayfish
  • 1 teaspoon of salt
  • A pinch of sugar — optional

Method

  1. 01

    Mixing the Base. Place roasted corn flour in a large bowl. Add ground crayfish, ground Atarodo, ground dawadawa, salt and a pinch of sugar. Mix dry ingredients thoroughly.

    Warming the palm oil. Gently warm palm oil until liquid and pourable. Do not overheat.

    Combining. Pour warm palm oil over dry corn mixture gradually, mixing with your hands as you pour. Add just enough oil to bind the mixture — crumbly but holds together when squeezed, not wet or greasy.

    Shaping. Take handfuls and squeeze firmly to form balls, cakes or flat discs. The palm oil binds the balls together.

  5. 05

    Serving. Serve immediately or allow to firm up at room temperature for 30 minutes.
