Noodles Lagos Street Style

Indomie Noodles Nigerian Style represents one of the most fascinating food adaptation stories in Nigeria — the complete transformation of a simple Indonesian instant noodle into a distinctly Nigerian street food and home-cooking dish. Since its introduction to Nigeria in the 1980s, Indomie has been completely reimagined by Nigerian cooks who fry it in palm oil with onions, Atarodo, vegetables, eggs and sometimes meat.

Ingredients
- 2 packs of Indomie instant noodles (any flavour — seasoning sachets are used)
- 2 big eggs
- 1 medium onion, thinly sliced
- 2 Atarodo, finely chopped
- 1 medium carrot, julienned
- A big handful of cabbage, finely shredded
- 1 big handful of diced beef, chicken or sausage — optional
- 2 cooking spoons of vegetable oil
- 1 tablespoon of soy sauce — optional
- The seasoning sachets from the noodle packs
- Salt to taste
Method
- 01
Parboiling the Noodles. Bring 2 glasses of water to a boil. Add noodles and cook for just 2 minutes — significantly less than the packet instruction. Drain and rinse briefly with cold water. Toss with a teaspoon of oil to prevent sticking.

Stir-Frying the Base. Heat oil in a large wide pan or wok over high heat. Add sliced onion and Atarodo. Stir-fry 2 minutes. Add diced meat if using and stir-fry 3 minutes.

Adding Vegetables. Add julienned carrot and shredded cabbage. Stir-fry 2 minutes — keep slightly crunchy.

Adding Noodles. Add parboiled noodles. Open seasoning sachets and sprinkle over. Add soy sauce if using. Toss vigorously over high heat for 2 minutes until noodles are heated through and slightly fried.

Adding Eggs. Push noodles to one side. Break 2 eggs into the empty space. Allow to set slightly then scramble into large curds. Fold through the noodles. Cook 1 more minute. Taste and adjust salt.
