Ogiri Okpei is the Igbo equivalent of Iru — a fermented seed condiment made from castor beans (Ricinus communis, with the toxic ricin destroyed during the long boiling process) that provides the deep, intensely pungent, unmistakably Igbo umami depth to Ofe Onugbu, Ofe Akwu, Ofe Egusi and virtually every important Igbo soup. Ingredients

  • A big quantity of castor bean seeds (the toxic compounds are destroyed by prolonged boiling — do not skip this step)
  • Water for multiple long boilings
  • Banana leaves for fermentation wrapping
  • A warm location for the fermentation

Method

    Critical Safety Note — The Boiling is Non-Negotiable. Raw castor beans contain ricin, a highly toxic compound. The extended boiling in this recipe (5 to 6 total hours of boiling across multiple sessions) effectively destroys the ricin. Do NOT attempt to skip or shorten the boiling steps. This is a critical food safety requirement.

    First Long Boiling — 3 Hours. Place the castor beans in a very large pot with abundant water. Boil vigorously for 3 full hours, adding water as needed to keep the beans fully submerged. After 3 hours, drain and discard the water.

    Second Long Boiling — 2 Hours. Add fresh water and boil again for 2 more hours. Drain again. The seeds should be very soft by now.

    Dehusking. While still warm, remove the outer husks by rubbing the seeds between your palms repeatedly. The husks should come away leaving the inner seed. Rinse well.

    Fermentation Wrapping. While still warm, wrap the dehusked seeds tightly in clean banana leaves or cloth. Place in the warmest available location. Leave undisturbed for 5 to 7 days, checking after day 3. The fermentation is complete when the seeds are sticky, very pungent and have turned dark.

  6. 06

    Finishing. Season with salt. Use immediately or store.
