Okra and Groundnut Health Soup

Okra and Groundnut Health Soup combines the remarkable digestive health properties of fresh okra with the sustained protein and healthy fat content of groundnuts to create a nourishing, soothing soup that is particularly beneficial for gut health. Okra's high mucilage content is a prebiotic fibre — it feeds beneficial gut bacteria and has a soothing, anti-inflammatory effect on the digestive tract.

Ingredients

  • 20 to 25 fresh okra pods, very finely chopped
  • 2 big handfuls of ground roasted groundnuts (peanut paste)
  • 1 big handful of smoked fish, soaked and deboned
  • 2 cooking spoons of palm oil
  • 2 big handfuls of ground dried crayfish
  • 2 Atarodo (hot chilli peppers), blended
  • 1 big onion, sliced
  • 2 seasoning cubes (Knorr), crushed
  • Salt to taste
  • 3 glasses of water

Method

    Building the Soup Base. Heat palm oil in a wide pot. Add sliced onion and fry 2 minutes. Add blended Atarodo and fry 5 minutes. Add smoked fish, ground crayfish, seasoning cubes and salt. Add 3 glasses of water. Bring to a simmer. Cook 8 minutes.

    Adding the Groundnut Paste. Add the groundnut paste to the simmering broth. Stir very well to dissolve completely into the soup. The groundnut will thicken the broth and add a gentle richness. Simmer 8 more minutes.

    Adding the Okra. Add the very finely chopped okra. Stir immediately. Cook for just 5 minutes — the okra will thicken the soup with its natural mucilage into a gentle draw consistency. Taste and adjust seasoning. Serve hot.
