Tiger Nut and Moringa Smoothie Bowl
Tiger Nut and Moringa Smoothie Bowl is a modern Nigerian health food creation that combines two of Nigeria's most nutritionally exceptional indigenous ingredients — tiger nuts (ofio) and moringa leaves (ewe ile) — into a nutrient-dense breakfast bowl. Tiger nuts are rich in resistant starch, iron, magnesium, phosphorus and vitamin E.

Ingredients
- 2 big cups of tiger nuts (ofio / Cyperus esculentus), soaked overnight
- 2 glasses of water for blending FOR THE MORINGA LAYER:
- 2 big handfuls of fresh moringa leaves OR 2 big big tablespoons of dried moringa powder
- 1 glass of water TOPPINGS:
- 1 ripe banana, sliced
- A big handful of fresh pineapple pieces
- A big handful of sliced mango
- A big handful of sesame seeds or groundnuts, lightly toasted
- A drizzle of honey
- A small handful of dried coconut shreds

Blending the Tiger Nut Base. Drain the soaked tiger nuts. Blend with 2 glasses of fresh water at high speed for 2 to 3 minutes until completely smooth and creamy. Strain through a fine muslin cloth, squeezing out all the liquid. The resulting tiger nut milk should be thick, creamy and naturally sweet.

Preparing the Moringa. If using fresh moringa leaves, blend with 1 glass of water until smooth, then strain. If using dried moringa powder, simply dissolve in a glass of water and stir well.

Combining. Pour the thick tiger nut milk into a wide bowl. Drizzle the moringa liquid over the top — or mix together if you prefer a uniform green colour.

Adding Toppings. Arrange all the toppings artfully over the surface: banana slices, pineapple pieces, mango, toasted sesame seeds or groundnuts, coconut shreds. Drizzle honey over the entire bowl.

Serving. Serve immediately and eat with a spoon — the smoothie bowl is thicker than a drink and is eaten like a porridge with toppings.
