The Nigerian Small Bites Selection is a composed tasting menu opener — a collection of four to five single-bite presentations of classic Nigerian flavours in innovative fine dining formats. Each small bite delivers a complete Nigerian flavour experience in a single mouthful while demonstrating technical precision and creative ambition.

Ingredients

  • A small piece of premium raw beef, very finely minced and seasoned with Yaji
  • Small crispy crackers or thin toast rounds
  • Shaved raw onion and dry Yaji for topping FOR THE PEPPER SOUP SHOTS:
  • 1 big glass of intensely concentrated goat pepper soup broth — strained very clear through a clean cloth
  • Small scent leaves for garnish FOR THE COCONUT JOLLOF BALLS:
  • Cold Jollof Rice formed into small balls the size of a large marble
  • Desiccated coconut for rolling FOR THE BANGA TOAST:
  • Thin slices of toasted Gurasa (Recipe #246)
  • Warm Banga sauce, blended smooth and aerated with a hand blender to create a light foam
  • Ground crayfish for sprinkling FOR THE EWEDU SPOON:
  • Small Chinese soup spoons
  • A small spoonful of well-seasoned Ewedu
  • A tiny spoonful of thick Gbegiri reduction on top

Method

  1. 01

    Suya Tartare Bites. Season the finely minced raw beef with Yaji spice, a pinch of salt and a drop of groundnut oil. Place a small amount on each crispy cracker. Top with paper-thin shaved onion and a tiny dusting of dry Yaji. Serve immediately — do not prepare more than 20 minutes ahead.

    Pepper Soup Shots. Reduce the pepper soup broth until very intensely flavoured. Strain carefully through a clean cloth until the broth is beautifully clear. Warm to just below boiling. Pour a small amount into each shot glass. Float 1 tiny scent leaf on the surface. Serve warm.

    Coconut Jollof Balls. Press cold Jollof Rice firmly between your palms into a small, compact sphere. Roll the ball in desiccated coconut until completely and evenly coated. Arrange on a serving board.

    Banga Toast Preparation. Toast thin Gurasa slices until crispy and golden. Blend warm Banga sauce until smooth, then aerate briefly with an immersion blender until it has a light, slightly foamy texture. Spoon onto each toast. Dust with a pinch of ground crayfish.

    Ewedu Spoon Assembly. Place a small amount of well-seasoned Ewedu in the bowl of a Chinese soup spoon. Top with a tiny, precise spoonful of thick Gbegiri reduction. The two colours — deep green and golden — should be clearly visible and distinct.

  6. 06

    Service Presentation. Present all five small bites simultaneously on a large wooden board or individual slate. One of each type per guest. No cutlery provided — this is an entirely hand-eating and drinking course.
