Pan-Seared Tilapia with Banga Reduction

Pan-Seared Tilapia with Banga Reduction is a landmark Nigerian fine dining dish — a whole tilapia or large fillet seared to a perfectly crispy skin in a very hot pan, then served on a pool of concentrated, glossy Banga (palm nut) sauce that has been cooked down to a silky, intensely flavoured restaurant-quality reduction. The Delta pepper soup spice elements — oburunbebe, atama, ehuru and uziza — are retained in the reduction but presented in a more refined, concentrated form

Pan-Seared Tilapia with Banga Reduction, Nigerian cooking

Ingredients

  • 2 whole tilapia (ask the fishmonger to scale and gut them) OR 4 large tilapia fillets, skin on
  • Lemon juice and salt for cleaning
  • A pinch of sea salt and white pepper for seasoning
  • 2 cooking spoons of vegetable oil for searing FOR THE BANGA REDUCTION:
  • Thick palm nut cream — from a big pot of fresh palm nuts OR 1 big tin of palm nut extract
  • 1 piece of oburunbebe stick
  • 2 big big tablespoons of crumbled dried atama leaves
  • 1 teaspoon of ground ehuru
  • 1 teaspoon of ground uziza seeds
  • 2 Atarodo (hot chilli peppers), very finely blended
  • 2 big handfuls of ground dried crayfish
  • 1 shallot or small onion, finely minced
  • 2 seasoning cubes, crushed
  • Salt to taste
  • 1 tablespoon of butter — for finishing the reduction

Method

    Making the Banga Reduction. Combine palm nut cream in a wide saucepan with oburunbebe, atama leaves, ehuru, uziza seeds, finely blended Atarodo, minced shallot, ground crayfish and seasoning. Bring to a simmer over medium heat. Cook uncovered for 20 to 25 minutes, stirring regularly, until the sauce has reduced by half and has a glossy, concentrated sauce-like consistency — it should coat the back of a spoon cleanly. Remove oburunbebe stick. Stir in 1 tablespoon of butter off the heat for extra gloss. Season and keep warm.

    Preparing the Tilapia. Score the skin of each tilapia 3 to 4 times with a sharp knife. Season with sea salt and white pepper on both sides and inside the cavity if using whole fish. Pat the skin completely dry with paper towels — completely dry skin is the key to a perfectly crispy sear.

    Searing the Tilapia. Heat 2 cooking spoons of vegetable oil in a wide, heavy pan over very high heat until the oil is shimmering and beginning to smoke. Place the tilapia skin-side down. Press firmly with a spatula for the first 30 seconds to prevent the fish from curling. Sear without moving for 4 to 5 minutes until the skin is deep golden-brown and completely crispy. Flip carefully. Cook the other side for 2 to 3 minutes until cooked through.

    Plating. Spoon a generous pool of warm Banga Reduction onto the centre of a warm plate. Place the seared tilapia skin-side up on the reduction — the crispy skin must remain visible and dry. Garnish with micro herbs or shaved spring onion. Serve immediately.
