Shuku Shuku

Also known as Shuku Shuku (Coconut Balls)

Grated coconut bound with condensed milk or sugar and egg, rolled in more coconut and baked or left to set. The book has coconut candy; this is the party coconut ball.

Ingredients

  • 3 cups of freshly grated coconut
  • 1 tin of condensed milk, or ¾ cup of sugar
  • 1 egg white
  • ½ teaspoon of vanilla
  • A pinch of salt

Method

  1. 01

    Mix coconut, condensed milk or sugar, egg white, vanilla and salt.

    Roll into small balls, coat in extra coconut, and bake at 160°C for 15 to 20 minutes until just set, or chill to firm. Cool before serving.
