Boiled Irish potatoes bound with salad cream, egg, onion and a little pepper — the potato module of a Nigerian party spread, served on its own when rice salad is already on the table.

Ingredients
- 8 Irish potatoes, boiled and cubed
- 3 hard-boiled eggs, chopped
- 1 small onion, finely sliced
- 1 carrot, diced and blanched
- Salad cream
- Salt and a pinch of white pepper
Method

Cool the potatoes. Fold with egg, onion, carrot, salt, pepper and enough salad cream to coat.
