Also known as Pito (Light Fermented Grain Drink)

Pito is the lighter sister of burukutu: fermented maize or sorghum, strained to a thinner, milder drink sold in calabashes and Lagos street coolers.

Ingredients

  • 4 cups of maize or sorghum
  • Water

Method

    Malt the grain as for burukutu, cook a thinner mash, ferment until lightly sour, and strain well so the drink is drinkable rather than porridge-thick. Serve cool the same day.
