Nigerian Party Salad

Also known as Nigerian Party Salad (Salad Cream Bowl)

The wedding and Sunday-rice salad: lettuce or cabbage, cucumber, tomato, carrot, boiled Irish potato or pasta, baked beans, sweetcorn and egg, dressed with Heinz salad cream. Coleslaw and a plain vegetable salad are already in the book; this is the full party bowl.

Nigerian Party Salad, Nigerian cooking

Ingredients

  • 1 medium bunch of lettuce, shredded (or half cabbage, shredded, for crunch)
  • 5 carrots, grated
  • 4 small Irish potatoes, boiled and cubed
  • 2 cucumbers, seeded and sliced
  • 5 plum tomatoes, seeded and chopped
  • 3 hard-boiled eggs, sliced
  • 1 tin of baked beans in tomato sauce
  • 200 g of sweetcorn, drained
  • Heinz salad cream, to dress
  • Boiled macaroni, corned beef or green peas — optional extras

Method

    Cook the potatoes and eggs. Wash and cut all the vegetables. Drain the sweetcorn.

    Layer the vegetables, potato, beans and corn in a large bowl in small batches so the colours mix.

    Arrange the sliced eggs on top. Chill at least 1 hour.

    Dress with salad cream just before serving, or serve the cream on the side so the salad stays crisp. Eat with jollof, fried rice or moi moi within the day.
