No-Oven Pizza

Also known as No-Oven Pizza (Covered Frying-Pan Method)

The same Nigerian pizza, written for kitchens with no oven: a frying pan, a tight lid, and low heat. This is how a lot of people first learned to make pizza in Nigeria.

No-Oven Pizza, Nigerian cooking

Ingredients

  • Dough: 2 cups of flour, 1½ teaspoons of yeast, 1 teaspoon of sugar, ½ teaspoon of salt, 1 tablespoon of oil, about ¾ cup of warm water
  • ½ cup of thick tomato stew or ketchup mixed with a little fried pepper
  • Cooked chicken or sausage, sweetcorn, sliced pepper and onion
  • 1 cup of grated cheese
  • Oil for the pan

Method

    Make the dough and let it rise 45 minutes. Roll it to fit your widest frying pan.

    Oil the pan, lay the dough in, and cook uncovered 2 minutes so the bottom sets.

    Spread sauce and toppings. Cover tightly. Cook on low heat 12 to 18 minutes, until the cheese melts and the base is cooked through. If the bottom browns too fast, lift the pan off the heat for a minute with the lid still on. Slice in the pan.
