Kunu Tsamiya

Also known as Kunu Tsamiya (Tamarind Kunu)

Millet or sorghum kunu soured and flavoured with tamarind (tsamiya), distinct from kunu zaki, kunu aya, kunu gyada and from a plain tamarind drink.

Ingredients

  • 2 cups of millet or sorghum
  • A handful of tamarind pulp (tsamiya)
  • Ginger, cloves and chilli, to taste
  • Sugar
  • Water

Method

  1. 01

    Soak and grind the grain. Mix with water and let the starch settle; cook part of the sediment as a thin gruel.

    Soak the tamarind, mash and strain the sour juice into the kunu. Spice, sweeten, thin with water and chill.
