Also known as Jacket Moi Moi (Bean Pudding Steamed in the Skin)

Jacket moi moi is moi moi steamed with the bean skins left on, which gives a rustic colour, extra fibre and a slightly earthier taste than the peeled classic already in Lounje.

Ingredients

  • 3 cups of honey beans or brown beans, soaked (not peeled)
  • 1 onion
  • 2 tatashe and 1 Atarodo
  • 1 cooking spoon of vegetable oil
  • 1 handful of crayfish
  • 2 seasoning cubes
  • Salt
  • Boiled egg or smoked fish, optional filling

Method

    Blend the unpeeled soaked beans with onion, peppers and a little water to a thick batter. Mix in oil, crayfish, cubes and salt.

    Pour into bowls or leaves, adding egg or fish if using. Steam 45 to 60 minutes until set.
