Ekuru (White Moi Moi)
Also known as Ekuru (Steamed White Bean Pudding)
Ekuru is steamed peeled beans with almost no pepper — the white cousin of moi moi — then eaten with a separate ata dindin or stew. Do not confuse it with Aadun Ekuru, the corn snack already in the book.

Ingredients
- 3 cups of black-eyed peas, soaked and peeled
- 1 small onion
- Salt to taste
- A little water for blending
- Leaves, bowls or foil for steaming
- Ata dindin or stew, to serve
Method
- 01
Blend the peeled beans with onion and very little water to a thick, smooth paste. Add salt. Do not add pepper, oil or crayfish — that would make moi moi.

Beat the paste briefly. Spoon into leaves or bowls.

Steam 45 to 60 minutes until firm. Unmould and serve with a generous pepper sauce.
