Ekuru (White Moi Moi)

Also known as Ekuru (Steamed White Bean Pudding)

Ekuru is steamed peeled beans with almost no pepper — the white cousin of moi moi — then eaten with a separate ata dindin or stew. Do not confuse it with Aadun Ekuru, the corn snack already in the book.

Ingredients

  • 3 cups of black-eyed peas, soaked and peeled
  • 1 small onion
  • Salt to taste
  • A little water for blending
  • Leaves, bowls or foil for steaming
  • Ata dindin or stew, to serve

Method

  1. 01

    Blend the peeled beans with onion and very little water to a thick, smooth paste. Add salt. Do not add pepper, oil or crayfish — that would make moi moi.

    Beat the paste briefly. Spoon into leaves or bowls.

  3. 03

    Steam 45 to 60 minutes until firm. Unmould and serve with a generous pepper sauce.
