Adoyo

Also known as Adoyo (Ogi Water with Pineapple)

A slightly sour street drink from fermented ogi water blended with pineapple and citrus. Lagos lists it with zobo, kunu and pito; Idoma country drinks it as a festive cereal drink. The book has ogi as porridge, not this pineapple mix.

Ingredients

  • 2 cups of ogi/akamu soak-water, or ½ cup of ogi paste loosened in 2 cups of water
  • 1 ripe pineapple, peeled and chopped
  • Juice of 1 orange or lime
  • Sugar to taste
  • Cold water, as needed

Method

    If using paste, whisk ogi into water and let the starch settle; use the tangy liquid, thinning with more water if it is too thick.

  2. 02

    Blend with pineapple and citrus. Sweeten, strain if you want it smooth, and serve very cold.
