Ogiri Isi Ugo

Also known as Ogiri Isi Ugo (Fermented Melon Seed Paste)

Ogiri Isi Ugo is a fermented condiment made specifically from melon seeds (egusi) through a controlled fermentation process that is entirely distinct from the cooking use of ground egusi in soups. The fermented version develops a pungent, deeply complex, intensely savoury character that functions as a flavour condiment rather than a soup thickener.

Ingredients

  • A big cup of melon seeds (egusi)
  • Banana leaves for wrapping
  • A warm location for fermentation
  • Salt to taste

Method

  1. 01

    Preparing the Melon Seeds. Wash the egusi seeds. Boil in water for 30 minutes until softened.

    Wrapping for Fermentation. Drain the boiled seeds. While still warm, wrap tightly in clean banana leaves. Place in the warmest available location for 3 to 5 days.

    Fermentation is Complete. The fermented Ogiri Isi Ugo is ready when the seeds are sticky, dark, pungent and have developed a complex fermented aroma similar to but lighter than ogiri okpei.

  4. 04

    Seasoning. Season with salt. Mash lightly into a paste with a spoon or mortar.
