Nigerian Sesame Balls

Also known as Nigerian Sesame Balls (Ekuku / Kuli Sesame)

Nigerian Sesame Balls — called Ekuku in some communities — are a traditional sweet confection made from sesame seeds (beniseed) bound together with a honey or sugar caramel into small, crunchy, fragrant spheres. Sesame seeds have been grown and consumed in Nigeria for centuries, particularly in the North where they are called Ridi and exported as an important agricultural product.

Ingredients

  • 2 big cups of sesame seeds (white, black or a mixture)
  • 1 big cup of sugar or 3 big big tablespoons of honey
  • 2 big tablespoons of water — if using sugar
  • A pinch of salt
  • Half a teaspoon of ground ginger — optional

Method

    Toasting the Sesame Seeds. Place the sesame seeds in a dry pan over medium heat. Toast, stirring constantly, for 3 to 5 minutes until the seeds are golden and fragrant. Watch carefully — sesame seeds burn quickly. Remove from heat immediately when golden.

    Making the Caramel. If using sugar: combine sugar, water and salt in a small, heavy pot over medium heat. Cook until golden-amber caramel forms. If using honey: warm the honey with a pinch of salt over low heat until fluid and slightly thickened.

    Combining. Working very quickly, pour the hot caramel or warm honey over the toasted sesame seeds. Stir rapidly and thoroughly until every seed is evenly coated.

    Forming the Balls. With well-oiled hands, take a tablespoon of the caramel-coated seeds and squeeze firmly into a ball, pressing hard to compact. The mixture cools quickly — work as fast as possible. Place on a greased tray and allow to cool and harden completely.
