Indomie for Children

Also known as Indomie for Children (Mild Stir-Fry with Vegetables)

Children's Indomie is one of the most universally prepared Nigerian children's meals — instant noodles made slightly more nutritious and child-friendly by adding colourful vegetables, a beaten egg and reducing the seasoning slightly from the full adult quantity. Nigerian children across all social classes eat Indomie — it is the great food equaliser of Nigerian childhood.

Ingredients

  • 2 packets of Indomie instant noodles
  • 1 medium carrot, peeled and diced small — child-friendly size
  • A big handful of frozen green peas
  • 1 small egg, beaten
  • A small handful of diced sweet corn — optional
  • 1 tablespoon of vegetable oil
  • The seasoning sachets from the noodle packets — use only half for younger children
  • A small pinch of salt

Method

  1. 01

    Cooking the Noodles. Boil noodles in water for 2 minutes — slightly undercook. Drain, reserving 3 big tablespoons of the cooking water.

    Stir-Frying the Vegetables. Heat oil in a wide pan over medium heat — not too high for children's cooking. Add the diced carrot and cook for 3 minutes until slightly softened. Add the green peas and sweet corn. Cook 2 minutes.

    Adding the Noodles. Add the drained noodles to the pan. Add the noodle seasoning sachets — use only half the amount for younger children to keep the sodium level appropriate. Add the reserved cooking water. Toss gently.

    Adding the Egg. Push the noodles to one side of the pan. Pour the beaten egg into the empty space. Scramble gently with a fork, then fold into the noodles before it is completely set. Toss everything together carefully.

  5. 05

    Serving. Allow to cool slightly before serving to children. The noodles should be warm, colourful with the vegetables and mildly seasoned. Serve in a child's bowl.
