Boiled Egg and Bread

Boiled Egg and Bread is the fastest complete Nigerian street breakfast — available at every Lagos bus stop, roadside kiosk and market entrance where women boil eggs in large pots and sell them alongside bread, cold drinks and Ogi. This combination requires no cooking skill beyond boiling water, yet provides complete protein from the egg and carbohydrates from the bread for a filling, energising morning meal.

Ingredients
- 4 big fresh eggs
- 1 Agege bread loaf (or any soft white bread), sliced
- Salt
- 2 fresh Atarodo (hot chilli peppers), finely sliced — for seasoning
- Butter or margarine — optional
Method

Boiling the Eggs. Place eggs in a small pot. Cover with cold water by 2 fingers thickness. Bring to a full rolling boil over high heat. Reduce to medium and boil for exactly 10 minutes for hard-boiled eggs. Remove immediately and place in cold water for 5 minutes — this stops the cooking and makes the eggs easier to peel.

Peeling the Eggs. Gently tap each egg all over on a hard surface to crack the shell. Peel under cold running water — the cold water gets between the shell and the egg white, making peeling much easier.

Seasoning. Cut each peeled egg in half. Place a small pinch of salt on each half. Place a tiny piece of sliced Atarodo on each half — the Nigerian way of eating boiled eggs.

Serving. Serve the seasoned egg halves alongside thick slices of bread, spread with butter if desired. Eat immediately.
