Indomie with Egg and Sausage

Also known as Indomie with Egg and Sausage (Nigerian Budget Quick Meal)

Indomie with Egg and Sausage is Nigeria's most consumed quick meal — the budget version of the Lagos street-style Indomie that provides a complete protein meal in under 15 minutes for the minimum possible cost. Every Nigerian has made this meal at some point — university students at midnight, office workers skipping their lunch break, children arriving home from school.

Ingredients

  • 2 packets of Indomie instant noodles (or any instant noodle brand)
  • 2 big eggs
  • 2 to 3 sausages or Vienna sausages, sliced into rounds
  • 1 small onion, thinly sliced
  • 1 Atarodo (hot chilli pepper), finely sliced
  • 1 tablespoon of vegetable oil
  • The seasoning sachets from the noodle packets
  • Salt to taste

Method

  1. 01

    Cooking the Noodles. Boil noodles in a glass and a half of water for 2 minutes — slightly undercook them. Drain almost completely, leaving about 2 big tablespoons of the cooking water in the pot.

    Adding All the Flavourings. Add all the seasoning sachets from the packets to the drained noodles. Add the sliced sausages to the hot noodles. Stir everything together.

    Scrambling the Eggs. Heat oil in a separate small pan. Add sliced onion and Atarodo. Fry for 1 minute. Break eggs directly into the pan. Scramble lightly — you want soft, slightly runny scrambled eggs, not dry.

    Combining. Add the scrambled eggs to the noodle pot. Toss everything together gently. Taste and adjust seasoning. Serve immediately in the pot or transfer to a bowl.
