Unripe Plantain Pepper Broth

Also known as Unripe Plantain Pepper Broth (Health Soup)

Unripe Plantain Pepper Broth is a health-conscious Nigerian pepper soup specifically formulated for those managing blood sugar or diabetes. Completely green, unripe plantains have a significantly lower glycaemic index than ripe plantains.

Ingredients

  • 3 big completely green unripe plantains, peeled and cut into thick rounds
  • 4 Atarodo (very hot chilli peppers) — whole
  • 1 teaspoon of ground uziza seeds
  • 1 teaspoon of ground ehuru
  • 1 teaspoon of ground Cameroon pepper
  • 3 big handfuls of ground dried crayfish
  • 1 big onion, sliced
  • 1 tablespoon of iru (fermented locust beans) — for depth and nutrition
  • 2 seasoning cubes (Knorr), crushed
  • Salt to taste
  • 5 glasses of water
  • A small handful of scent leaves, torn

Method

  1. 01

    Building the Health Broth. Place sliced onion and iru in pot with 5 glasses of water. Add all pepper soup spices, ground crayfish, seasoning cubes and salt. Bring to vigorous boil.

    Adding the Unripe Plantain. Add green plantain rounds to boiling spiced broth. Reduce to medium heat. Cook covered for 25 to 30 minutes — unripe plantain takes significantly longer to cook than ripe. Done when completely soft throughout when pierced with a fork.

    Finishing. Add scent leaves. Taste and adjust. Serve hot.
