Cow Tail Pepper Soup

Cow Tail Pepper Soup is one of the richest Nigerian pepper soups — made from oxtail which releases extraordinary collagen and bone marrow into the broth during its long cooking. The resulting broth is naturally thick, deeply golden and slightly gelatinous — it coats the back of a spoon in a way that signals exceptional nutritional density.

Ingredients

  • a big quantity of oxtail sections (bone-in, approximately 4 to 5 fingers width thick)
  • Lemon juice and salt for cleaning
  • 4 to 5 Atarodo (very hot chilli peppers) — whole
  • 1 teaspoon of ground uziza seeds
  • 1 teaspoon of ground ehuru
  • 1 teaspoon of ground Cameroon pepper
  • Half a teaspoon of ground selim pepper (uda)
  • 3 big handfuls of ground dried crayfish
  • 1 big onion, sliced
  • 2 seasoning cubes (Knorr), crushed
  • Salt to taste
  • 7 glasses of water
  • A small handful of fresh scent leaves, torn

Method

  1. 01

    Cleaning and Blanching. Rub oxtail with lemon juice and salt. Rinse. Blanch in boiling water 5 minutes, drain and rinse — this ensures a very clear broth.

    Building the Broth. Place blanched oxtail in a large pot with 7 glasses of fresh cold water. Add all pepper soup spices, ground crayfish, sliced onion, seasoning cubes and salt.

    Long Slow Cooking — Non-Negotiable. Bring to a vigorous boil, skim foam. Reduce to medium-low. Cover and simmer for 1 hour to 1 hour 15 minutes until oxtail is completely tender and meat falls from bone when pressed. The broth will thicken and enrich progressively as collagen dissolves. Pressure cooker: 40 to 45 minutes.

    Enriching the Broth. After full cooking, taste — the broth should be significantly thicker and richer than goat pepper soup, almost glossy. Adjust all seasonings.

  5. 05

    Adding Scent Leaves. Add torn scent leaves in the final 3 minutes. Serve immediately, piping hot.
