Ingredients

  • 2 big cups of garri (white garri works best)
  • 2 big cups of freshly grated coconut (from 1 medium fresh coconut)
  • 3 big tablespoons of sugar
  • A pinch of salt
  • Half a teaspoon of ground ginger — optional
  • Vegetable oil for frying — optional

Method

    Grating the Coconut. Crack the coconut, collect the coconut water separately. Grate the white coconut flesh finely using a box grater. Combine the grated coconut with the coconut water in a bowl.

    Mixing. Add the garri to the grated coconut and coconut water mixture. Add sugar, salt and ground ginger if using. Mix everything very thoroughly until a cohesive, sticky mixture forms. The garri will absorb the coconut moisture and bind the mixture together. If the mixture is too dry, add a little more coconut water or plain water. If too wet, add a little more garri.

    Shaping the Balls. Wet your hands with water. Take a tablespoon of the mixture and squeeze firmly in your palm, then roll between both palms into a smooth ball. The balls should be roughly the size of a large marble to a golf ball. Repeat with all the mixture. Place on a clean tray.

    Option A — Serve as Raw Balls. The balls can be eaten as is — they are already sweet, fragrant and satisfying at this stage.

    Option B — Pan-Frying. Heat a thin layer of vegetable oil in a pan over medium heat. Place the balls in the pan and fry gently, turning regularly, for 3 to 4 minutes until lightly golden on the outside. Drain on paper towels. Allow to cool slightly before eating.
