Kunu Gyada

Also known as Kunu Gyada (Groundnut Porridge)

Kunu Gyada is a thick, rich, slightly sweet Northern Nigerian groundnut porridge that occupies the space between a drink and a food. Made from freshly ground or blended roasted groundnuts cooked with spices and sweetened with sugar or honey, Kunu Gyada is an enormously nourishing drink that provides high-quality protein, healthy fats and energy in a single cup.

Ingredients

  • 2 big cups of raw groundnuts (peanuts), roasted and ground OR natural unsweetened peanut butter
  • 1 teaspoon of ground ginger
  • Half a teaspoon of ground cloves
  • Sugar or honey to taste
  • 5 glasses of water
  • A pinch of salt

Method

    Roasting and Grinding. If using raw groundnuts: dry-roast in a pan for 8 minutes until golden. Remove skins by rubbing between palms. Blend into a smooth paste with a little water.

    Cooking the Porridge. In a pot, dissolve the groundnut paste in 5 glasses of water, whisking until smooth. Add ground ginger, ground cloves and a pinch of salt. Place over medium heat and bring to a simmer, stirring continuously.

    Simmering. Simmer over medium-low heat for 15 to 20 minutes, stirring regularly, until the porridge thickens to a creamy, pourable consistency. Add more water if it becomes too thick.

    Sweetening and Serving. Add sugar or honey to taste. Stir well. Serve hot in mugs or glasses. Can also be served cold — refrigerate until chilled and stir well before serving.
