Plantain Fufu

Plantain Fufu — also known as Amala Ogede (plantain Amala) among the Yoruba — is an innovative Nigerian swallow made from the flour of dried, unripe green plantain. It has a slightly darker colour than regular wheat Semo, a mild, faintly sweet plantain undertone and a smooth, firm texture that sits between Semo and Amala in terms of feel.

Ingredients

  • 3 big cups of unripe plantain flour (dried green plantain flour)
  • 4 to 5 glasses of water
  • Extra boiling water as needed

Method

  1. 01

    Boiling the Water. Bring 4 glasses of water to a vigorous rolling boil in a medium pot.

    Adding the Plantain Flour. Reduce heat to medium. Add the plantain flour gradually while stirring continuously. The swallow will thicken quickly — stir vigorously and fast to prevent lumps.

    Turning. Once all the flour is incorporated, stir and press vigorously for 8 to 10 minutes until a smooth, cohesive, slightly greenish-brown swallow forms.

    Steaming. Cover tightly and steam on lowest heat for 4 minutes.

    Serving. With wet hands, mould into smooth balls. Serve immediately alongside any Nigerian soup.
