Atama Soup
Also known as Atama Soup (Efik Palm Nut Variant)
Atama Soup is a distinctive Efik palm nut soup that uses atama leaves (Heinsia crinita) as its primary aromatic agent — a dried, intensely fragrant leaf that is exclusive to the cooking of Cross River State and Akwa Ibom. When crumbled and added to palm cream, atama leaves release a deeply resinous, floral-earthy aroma that transforms the soup into something completely unique.

Ingredients
- A big pot of fresh palm nuts OR 1 large tin palm nut extract
- 3 big handfuls of dried atama leaves (Heinsia crinita), crumbled
- Half a medium goat or chicken, cut into pieces
- 2 big handfuls of stockfish, soaked
- 2 big handfuls of smoked catfish, soaked and deboned
- 1 big handful of periwinkles (isam), cleaned
- 4 big handfuls of ground dried crayfish
- 4 Atarodo (hot chilli peppers), blended
- 1 big onion, sliced
- 3 seasoning cubes (Knorr), crushed
- Salt to taste
- 2 pieces of oburunbebe stick
Method

Extracting Palm Cream. Boil, pound and strain fresh palm nuts as described in Recipe #052 to obtain thick palm cream. Or thin canned extract with water.

Cooking the Protein. Season and cook goat or chicken with onion, salt and seasoning cube for 30 minutes. Add stockfish for the last 15 minutes. Reserve stock.

Infusing the Spices. Pour palm cream into a wide pot. Add the crumbled atama leaves, oburunbebe sticks and blended Atarodo. Bring to a boil, stirring. Simmer for 15 minutes — this long infusion time allows the atama to fully release its distinctive aroma into the palm cream.

Building the Soup. Add all cooked meat, stockfish, smoked catfish and periwinkles. Add ground crayfish, remaining seasoning cubes and salt. Pour in enough reserved meat stock to adjust consistency. Simmer for 25 to 30 minutes, stirring gently every 5 minutes. Remove the oburunbebe sticks before serving. Taste and adjust all seasonings.
